Blackcurrant Pancakes, serves 2-3
  • 1 banana, mashed
  • 2 eggs, beaten
  • ¼ cup preferred milk
  • 1 teaspoon vanilla essence
  • ¾ cup almond meal
  • 1 teaspoon BLACKCURRANT POWDER
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon honey, or preferred sweetener, optional
Combine the mashed banana, eggs, milk and essence into a bowl and stir to combine.

Add remaining ingredients and combine gently.

Taste test and if required, add the sweetener.

If the mixture is too runny, add an additional tablespoon or two of the almond meal.

Likewise, if too thick, add a tablespoon or two of filtered water.

Heat a frypan over medium heat and add either a teaspoon of butter, ghee or coconut oil.

Once melted, scoop ¼ cup of the mixture into the pan. Flip once.

Serve with chia jam and your favourite yoghurt.
