Blackcurrant Almond Biscuits
  • 150g almond meal
  • 50g coconut oil, melted
  • 60g honey, or preferred sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon BLACKCURRANT POWDER
  • 1 tablespoon filtered water
  • Pinch of salt
Preheat oven to 150℃ and line a baking tray with baking paper.

Add all ingredients to a large bowl, food processor or thermomix and mix until just combined.

Roll the mixture into balls and place them on the tray, flattening slightly.

Bake for 12 minutes, or until they are starting to change colour.

Allow to cool before devouring. They will firm up as they cool.

You could stir through 2 tablespoons of roughly chopped chocolate if you want a choc chip feel.
