Berry Bliss Balls
  • 1 cup raw cashews
  • 1 cup desiccated coconut, plus extra for rolling
  • 1 lemon, zest and juice
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons preferred sweetener, I used maple
  • 1 teaspoon BLACKCURRANT POWDER
  • Pinch of salt
Add all ingredients to your blender or thermomix – starting with 1 tablespoon of your preferred sweetener - and blend until well combined.

Taste test and add additional sweetener if required.

Roll the mixture into balls and roll into the extra coconut.

Pop into the fridge to set before devouring!
